Fagopyrum esculentum ( Buckwheat or Ugal)

Fagopyrum esculentum ( Buckwheat or Ugal) is an important crop in some areas of the world. Buckwheat flour (known as kuttu ka atta) contains beneficial components for human health such as protein, dietary fiber, vitamins, polyphenolics, and minerals at high levels.

 It is cultivated widely in the hilly region of Uttarakhand as a leafy vegetable (called Ugal ka saag) during summer months. Sometime after taking one or two cuts for vegetable, the crop is left for flowering and subsequently seeds are harvested for making flour. Almora,
